Zucchini Muffins

Ingredients

1 1/2 Cup Flour
1/2 Cup Sugar
1/2 Cup 1/2 brown sugar
1 1/2 Cup Grated fresh or frozen zucchini
1/2 tsp Salt
2 Eggs
1/2 tsp Cinnamon
1/4 Can Nutmeg
1 tsp Vanilla
1/3 Cup Oil
2 tsp Baking Powder

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix together flour, sugars, salt, baking powder, cinnamon and nutmeg.
  3. Then add dry mixtures. Don't mix too much or the muffins will be tough
  4. Line muffin tins about 3/4 of the way. Bake for about 30 minutes or until golden brown.
