Ingredients


	1 lb Zucchini (About 2 medium)
	1 TBS Olive oil
	1/3 Cup Onion
	3 TBS Crushed garlic
	1 lb Tomatoes
	1 tsp Italian seasoning
	1 Cup Italian Cheese Mix or choose your own

Instructions

Heat oven to 400 degrees.
Saute onion and garlic. Add tomatoes. Add herbs and spices.
Cook until liquid is nearly gone. Don't let this dry out.
Cut zucchini into 1/4 inch thick slices.
Layer zucchini, tomato sauce, and cheese. This will make about four layers.
Bake for about 20 minutes, then put a final layer of cheese on top. lower the temperature to 375. Back another 20 minutes.
